They love their eggplant. Eggplant parmesan, fried eggplant; you name it, they love it.

When we wanted to open Mortadella Head, we decided to do a little “R&D,” so we took a few trips to Italy for inspiration.

We learned how to make Italian foods from the experts; pizza in Rome from the “Michelangelo of Pizza,” Gabriel Bonci, etc.

Over time we learned how to combine authentic Italian recipes with some of the things we loved eating when we were little kids. Things like big slices of pizza, meatballs, chicken parm, and steak & cheese.

One of our favorites is Pasta Alla Norma, a traditional Sicilian pasta dish that features roasted eggplant, ricotta Salata cheese, and basil.
